Thanksgiving Breakfast Recipes

Thanksgiving represents food, family and moments of sharing and professing gratitude. Whether you're up early on Thanksgiving Day to start prepping the turkey or it's the morning after and you're looking for a satisfying meal to put on the table, there are a number of Thanksgiving breakfast recipes that will keep you healthy, happy and ready to keep the holiday celebrations going.


Autumn Egg Scramble

Put together some of fall's freshest flavors in this updated and season version of average scrambled eggs.

8 eggs
2 tablespoons skim milk
1 tablespoon extra virgin olive oil
1 zucchini, chopped
1/2 red onion, sliced
1 cup mushrooms, sliced
1 cup red bell pepper, diced
Salt and pepper to taste

Heat a skillet and the olive oil. Add the zucchini, onion, mushrooms and pepper. Let the veggies sauté until cooked, about five minutes.
While they cook, whisk the eggs and the milk until combined. Pour the egg mixture into the pan with the vegetables and scramble.
Serve hot with a sprinkle of salt and pepper to taste. This recipe serves four and there are 215 calories per serving.

Fruit Salad


Salad For a twist on the basic fruit salad, add applesauce and cranberry sauce. You'll love the flavor and texture.

4 cups of cranberries or cranberry sauce
4 cups of all-natural, unsweetened applesauce
2 cups strawberries
2 cups blueberries
2 cups grapes, any color, seedless
2 bananas, sliced
1 cup crushed walnuts

Combine the berries, grapes and bananas.
Line up four separate dessert bowls, cereal bowls or parfait glasses. Place one cup of applesauce into each bowl, then one cup of cranberries or cranberry sauce.
Add the mixed fruit on top and then sprinkle with walnuts. It's a perfect parfait. This recipe makes four servings and there are 225 calories per serving.
